PRODUCT DESCRIPTION

Our canned whole truffles are created from the ultimate black Périgord truffle, allowing you to consume truffles all year round. Our method consists of sterilizing the product only once, which preserves the flavors of the precious black diamond, making our 1st boil canned food an exceptional product adored by Chefs.

USING ADVICE

Whole black truffles are to be cut into thin strips and added with their very aromatic juice to your preparations at the end of cooking. Raise their temperature without reducing their flavor. We recommend up to 15 grams of truffles per person. The possibilities are endless, with fish, meat, eggs, or even potatoes, our truffle gives free rein to your imagination.

CONSERVATION ADVICE

- Store in a dry place away from heat.
- After opening, keep refrigerated and consume quickly.
- The expiry date is on the lid of the product.

MANUFACTURING OF OUR CANNED WHOLE TRUFFLES

Our Extra whole truffles are washed, ground and packaged with the greatest care by our experts. Even today the truffles are washed by hand in order to preserve them from any aggression. They are then sorted and the best ones are set aside to be used in the production of our Extra first-cooked whole truffle preserves.

After being carefully selected and weighed, the truffles are placed in their jar. Here, we are talking about " net truffle weight at casing ". Then we add truffle juice and salt. The whole corresponds to the " net weight" . The jars are then sterilized. The " drained net weight" corresponds to the weight of the cooked truffle without the juice contained in the jar.

The first boiling or first cooking is usually reserved for preserves intended for catering professionals. It is a single and unique sterilization that is applied to the truffle , in order to preserve all its precious flavors. Maison Truffes Henras was the first to master its production.


TUBER MELANOSPORUM


The Tuber melanosporum has been the most used truffle species in cooking for more than two centuries. Its indescribable fragrance is very intense, whether in hot or cold culinary preparations.

Also known as the Périgord black truffle , it is harvested from mid-November to mid-March, the most mature truffles can be found from mid-January . The canned truffle from the first boil allows this truffle to be consumed throughout the year without worrying about the seasonality of the product while retaining all its flavors.
