Truffle mafaldines

For 4 people
  • 400 g of Mafaldine pastas
  • 2 butter knobs
  • 4 teaspoons of grape seed oil and black truffle Maison Henras
  • 2 onions
  • 4 cloves of garlic
  • 2 fresh black truffles
  • 4 tablespoons of white wine
  • 100g of mascarpone
  • 80g of Parmesan cheese

Step 1

Cook pasta according to the package instructions.

Step 2

Heat a skillet over medium-high heat with the butter and oil. When hot, add the chopped onion and garlic. Brown for 2 to 3 minutes.

Step 3

Grate half of the truffles. Add it to the pan and mix well. Brown again for 2 to 3 minutes.

Step 4

Brown again for 2 to 3 minutes. Add the white wine, reduce the heat and let brown for 5 minutes.

Step 5

When the pastas are cooked, drain them. Keep a bit of cooking water.

Step 6

Add the mascarpone to the pan. Mix again.

Step 7

Add the pastas, and a little cooking water if necessary. Mix well. Serve with truffle shavings.
