Black truffle tagliolini are made from carefully selected ingredients.
The black truffle juice present in the black truffle tagliolini recipe comes from the first boil of our black truffles. It is 100% Tuber melanosporum. Its strong aromatic intensity comes from the fact that it is not diluted with water during its preparation. It is completed by our homemade breakings.
Artisanal manufacture of tagliolini with black truffle
Maison Henras black truffle tagliolini are made in France by one of our artisan partners, selected by us for its expertise. He uses the ancestral recipe of tagliolini : a perfect blend of hard wheat semolina with broken pieces and black truffle juice from Maison Henras.
These ingredients are mixed in a kneading machine, to make a smooth and homogeneous dough. The latter is passed to the rolling mill to give fine and regular tagliolini. They are then rolled up on themselves, then allowed to dry at low temperature before being packaged.
With what side do you taste black truffle tagliolini?
Tagliolini is a specialty of Italian cuisine. Their ideal cooking is "al dente" cooking: only 2 to 4 minutes. They are excellent simply served with a knob of butter or a drizzle of olive oil. These two ingredients will enhance the delicate taste of the black truffle.
Gourmets can accompany tagliolini with truffles with roasted chicken supreme, scallops or simply grated Parmigiano Reggiano.
