The whole secret of successful mayonnaise lies in the eggs used during preparation, they will give flavor, consistency and color to the mayonnaise. This is why we have chosen eggs from French hens raised outdoors to make our black truffle mayonnaise.
We decorate the mayonnaise with black truffles breakings to add light woody touches specific to the black Périgord truffle and a very pleasant subtle crunch during tasting. To this are added a few spices such as saffron, turmeric and paprika to enhance the whole recipe.
How to use the black truffle mayonnaise ?
Black truffle mayonnaise can be used as a simple mayonnaise, on cold meats, raw vegetables or eaten cold with asparagus. Truffle mayonnaise can also be eaten with fish. It will reveal all of its aromas as an accompaniment to seafood. This truffle condiment takes on its full meaning when it is used in mimosa eggs.
