The carpaccio of black Périgord truffle 53% - NO ADDED FLAVOUR, is made by our teams in our workshop. It is composed of 20 g of beautiful black truffle slices and grape seed oil simply seasoned with salt and pepper. No artificial ingredients have been added. It is the true taste of Tuber melanosporum, nothing more!

An original manufacturing process 

The Périgord black truffle is a fragile product, very sensitive to heat treatment. It does not easily withstand sterilisation and without the implementation of a real specialist know-how, its taste can be altered. Many manufacturers of "truffle" products have found an easy solution: they swap the black truffle for the summer truffle (less expensive) and integrate powerful, often caricatured, flavours.

Maison Henras has decided to offer a new generation of "truffle" products that reflect the true taste of cooked Tuber melanosporum, without any artificial ingredients or added flavourings.

To make this carpaccio, Maison Henras has used 20 g of black Périgord truffle slices from the peak season harvests and has chosen an oil that is neutral in taste, just seasoned with salt and pepper. You will find the authentic taste of the undergrowth of the Tuber melanosporum, subtle, light and intended to sublimate the flavour of this carpaccio.

How to use the black truffle carpaccio?

This black truffle carpaccio can be used in hot or cold dishes. 

Place the slices on just-snacked scallops, a risotto or simply on a slice of buttered bread for an aperitif. We advise you to pour the black truffle infused oil contained in the jar over your preparations.

Tips for use

Place the slices of black truffles on your hot or cold preparations, then pour the oil contained in the jar.
