MANUFACTURING OF OUR CANNED BLACK TRUFFLE SLICES
Produced in our workshops, the black truffles that cannot correspond to other categories are transformed into slices. Thinly sliced with a mandolin, they keep all their crunch, their flavors and their taste. Exclusively composed of canned Tuber Melanosporum , our slices of black truffles can be consumed all year round.
Very easy to add to a dish, black truffle strips add a touch of truffle crunch to your recipes.
After being carefully selected and weighed, the truffles are placed in their jar. Here, we are talking about “ net truffle weight at casing ”. Then we add truffle juice and salt. The whole corresponds to the “ net weight”. The jars are then sterilized. The “ drained net weight” corresponds to the weight of the cooked truffle without the juice contained in the jar.

TUBER MELANOSPORUM
The Tuber melanosporum has been the most used truffle species in cooking for more than two centuries. Its indescribable fragrance is very intense, whether in hot or cold culinary preparations.
Also known as the Périgord black truffle , it is harvested from mid-November to mid-March, the most mature truffles are found from mid-January . The canned truffle from the first boil allows this truffle to be consumed throughout the year without worrying about the seasonality of the product while retaining all its flavors.

Comment savoir si une truffe est bonne ?
Pour vérifier si votre truffe est encore comestible vous pouvez tout d’abord vérifier que
son aspect extérieur est noir, et qu’elle n’est pas trop ramollie. Elle doit avoir gardé son
odeur intense pour être agréable à déguster.
