The maison henras
With the sandstone of uneven harvests, of its plural scent, in the memory of the land of choice, the knowledge of the truffle has been our profession since 1820.
Founded at Thiviers (24) in 1820, in the heart of the local truffle terroir, then transferred to Périgueux, the Maison Bouton & Henras was at that time offering fresh mushrooms and truffles for wholesale.
In order to allow the great chefs to use the "Tuber" throughout the year and to make it travel across the world, the trading house was the first apply to mushrooms the technique invented by Nicolas Appert back in 1795, the appertisation.
The Bouton & Henras truffles, from the best varieties of the Périgord, are then preserved in special bottles, with wide necks, sealed with wax. With the passing of time, the Bouton & Henras house was transformed into the Maison Henras and established itself in Cahors (46) in the middle of the 20th century. The activity was transferred to Albas (46) at the beginning of the 2000s.
For nearly 200 years, the Maison Truffes Henras 1820 has been selecting, cleaning by hand, calibrating and preparing the best truffles to offer a tailor-made selection to its customers. It was one of the first houses to turn truffles into canned goods, allowing chefs to use them even during the off-season. For the most demanding chefs, the Maison Truffes Henras 1820 knows how to find the specific product expected, intended for a particular creation. >
Arriving in lots in the ground, freshly cavated truffles are cleaned, one by one, by hand. They are then sorted, cutted and calibrated. Each truffle goes through the expert hands of our selectors to be evaluated.>
A real race against time then begins to ship as quickly as possible all truffles intended for our star chefs clients, restaurateurs, craftsmen or retailers.>
The most fragile truffles will be transformed into preserves of first boiling or will be used in homemade gourmet preparations, by our teams.>
Distinguished in 1889 by a gold medal at the Paris World Fair for its truffle preserves, the Maison Truffes Henras 1820 acquired the status of expert «ès Tuber Melanosporum».>
The homemade expertise in terms of selection was affirmed with the need to explore new truffle terroirs, to maintain a high level of requirement despite the irregularity of the harvests.
