When we make our 1st boiling truffle preserves, we select each truffle according to precise criteria: their shape, their aspect and their size. 

Each truffle, pieces or peels of truffles are placed in a jar. We then add truffle juice and salt before placing the jars in the autoclaves for sterilization. After cooking, the truffles have lost almost a quarter of their weight. This loss is found in the juice contained in the jar. It is a true concentrate of taste!
